(1) 10-ounce package frozen spinach, thawed, drained, and chopped

(1) 4-ounce can chopped green chiles, undrained

(2) cups shredded low-fat Cheddar cheese
(1) 14-ounce can artichoke hearts, chopped
1/2 cup shredded Pepper Jack cheese

Cooking Preparation

Preheat the oven to 350 degrees. Combine the beans, spinach, salsa, chiles, garlic, Cheddar cheese, and atichoke hearts in a 1-quart casserole dish, Sprinkle the Pepper Jack cheese on top. Bake for 30 minutes, or until the cheese is bubbly and golden. Then serve to waiting guests!

  1. Okay, we just made this and it is amazing how cheap and delicious the recipe was! The only thing we did different was not using baked tortilla chips.
