Cheap and Easy Recipes To Fit Any Budget

Ground Beef, Cauliflower, Broccoli and Carrot Casserole

If you have looked around our site before, you have probably noticed that we have some recipes that require canned soup. It is really nice to have canned soup on hand to make a quick meal if you’re in a bind. Last night I was in one of those binds, so I made this delicious and (mostly) healthy casserole. Our kids loved it and asked for seconds (and thirds, too!).

 Ingredients:

  • 1 lb. ground beef/hamburger meat, browned
  • 2 packages 16 oz. mixed vegetables (broccoli, cauliflower and carrots is what we used)
  • 1 large onion, diced
  • pepper, to taste
  • 2 cans (10.75 oz.) cream of chicken soup
  • 1 canful milk

Directions:

  1. Preheat oven to 400 degrees F.
  2. Cook vegetables according to package directions.
  3. Meanwhile, in a large skillet, brown ground beef and onion over medium heat.
  4. Once browned, season with pepper.
  5. Stir in canned soup and a canful of milk; mix well.
  6. Add vegetables and mix well.
  7. Keep cooking until it is heated through (bubbling).
  8. Put mixture into a 9×13″ baking dish and bake for 30-45 minutes, or until the vegetables are nice and tender.

You can purchase a 16 oz. package of cauliflower, broccoli and carrots at Target for only 89 cents (that is what it costs at my local store). This is definitely a cheap, delicious and easy meal to make that the whole family will love!

Deliciously Easy Sloppy Joes

Green peppers in sloppy joes had never crossed my mind until this evening and I have to say that I’m now hooked. Try this recipe and you will be too!

  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 tsp. yellow mustard (prepared)
  • 1/2 tsp. garlic powder
  • 3 tsp. brown sugar
  • 3/4 cup ketchup
  • 2 Tbsp. molasses (the “secret” ingredient)
  • salt, to taste
  • ground black pepper, to taste

Directions:

  1. Brown ground beef, onion, green pepper in a large, non-stick skillet. Drain
  2. Stir in mustard, garlic powder, brown sugar, molasses and ketchup. Mix thoroughly.
  3. Reduce heat and simmer for 25-30 minutes. Season with salt and pepper.

This recipe was originally found on AllRecipes.com. It has over 1,000 positive reviews! We added the molasses to it for even more flavor.
