Easy Apple Salad with Yogurt DressingThe other day I wanted something different for lunch. I looked in my fridge and the first thing I saw was a bagged salad. I figured I would just have a regular, old salad with croutons and dressing, but then I decided I wanted something better than that. That’s where this recipe comes from and you will be amazed by how delicious and simple it is. Not to mention, an inexpensive lunch or dinner addition.

Ingredients:

  • 1 bagged salad, your favorite variety
  • 4 apples, sliced in wedges
  • 1 medium-sized container lemon-flavored yogurt (or 2-3 individual yogurts)
  • honey, to taste
  • lemon juice, to taste
  • pecans or walnuts, optional

Directions:

  1. Pour the bagged salad into a large bowl.
  2. Cut apples into wedges and mix into the salad.
  3. Put the yogurt into a small bowl.
  4. Drizzle some honey, to taste.
  5. Pour a couple of splashes of lemon juice, to taste.
  6. Mix well and top with pecans or walnuts.

This is a great salad if you are on a diet or are just trying to eat healthier. Your children can definitely help with this one, because it’s so simple.




Crock Pot Madras Curry Chicken


Crock Pot Madras Curry ChickenA few years ago my husband and I went to Taste of India (we were told it was delicious), a restaurant by my in-law’s house. We fell in love with the delightfully spiced food. We love to eat and make various curried dishes and this tastes like it came straight from an Indian restaurant!

Ingredients

  • 3 onions, sliced thinly
  • 4 apples, peeled, cored and thinly sliced
  • 1 tsp. salt
  • 1 Tbsp. curry powder
  • 1 cut-up fryer chicken

Directions

  1. Combine apples and onion in a bowl.
  2. Sprinkle salt and curry on mixture and mix well.
  3. Place in bottom of crockpot.
  4. Place chicken over apple and onion mixture.
  5. Sprinkle with paprika and more curry.
  6. Cook for 6 hours on high.
  7. Tip: Baste occasionally for extra juicy flavor.
