Banana, Nut & Honey Breakfast Bagels


This morning I wanted a bagel for breakfast, but we didn’t have any cream cheese or anything. I started thinking about healthy things I could use for a bagel topping and thought I would mush up some banana and see how it tasted. I honestly loved it!

 Ingredients:

  • 1 bagel, sliced and toasted
  • 1-2 ripe bananas, mushed
  • nuts (sunflower seeds, pecans, walnuts, etc.)
  • honey, as desired

Directions:

  1. Slice bagels in half and toast in the toaster.
  2. Peel bananas and place into a medium bowl.
  3. Mush the bananas with a potato masher, fork or meat tenderizer.
  4. Put the mushed banana on the bagel and sprinkle with nuts.
  5. Drizzle with honey and eat!

A delicious way to eat a bagel that is much healthier than cream cheese. Einstein bagels have nothing on this!




Quick Apple Cinnamon Pancakes


These pancakes remind me a lot of cinnamon donuts. Yum!

Ingredients:

  • 1 cup flour
  •  1 1/2 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 egg
  • 3 Tbsp. oil
  • 1 medium apple, chopped finely
  • 3/4 cup milk

Directions:

  1.  In a large bowl, mix flour, baking powder, sugar, salt, cinnamon and nutmeg.
  2. In a small bowl, fluff egg with fork and add milk.
  3. Add egg/milk mixture to flour mixture and stir until lumps are smoothed out.
  4. Add oil and apples.
  5. Heat on the griddle just as you would with any other pancakes.

Apple Cinnamon pancakes do not disappoint! If you want extra for breakfast later in the week, make a double or triple batch. The kids will love helping too!
