Super Simple Homemade Pizza SauceThis recipe is great for any kind of pizza that you are making; you can always adjust the amounts to what you need.

Ingredients:

  • 2 cups tomato sauce
  • 6 oz. can tomato paste
  • 2 cloves garlic, minced
  • 1-2 tsp. thyme
  • 1-2 tsp. basil
  • 1 Tbsp. sugar (optional)

Directions:

  1. Mix all ingredients well and taste. If you are lacking in any of the spices, add a little bit more.
  2. Use on pizza!

Quick Mini English Muffin Pizzas


Quick Mini English Muffin PizzasOK, so I am sure that you have probably heard of these (if you have not actually made them), but on the slight chance you haven’t, give it a try. I think my first memory of these was at the Minnesota State Fair when I was just a little kid. It became one of the things I just had to have every year. These are incredibly delicious, for being so easy! The best part is that your kids can help out. Give it a try on the grill if you want to.

Ingredients:

  • 8 english muffin halves
  • homemade pizza sauce, see recipe here
  • mozzarella cheese
  • pizza toppings (i.e. pepperoni, sausage, peppers, onions)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Toast the english muffin halves.
  3. Prepare the pizza sauce.
  4. On a large cookie sheet, place english muffins and spoon sauce on them.
  5. Put cheese on top, then add toppings and more cheese.
  6. Bake for apprx. 10 minutes, or until cheese is melted through and starting to bubble.
  7. Tip: to make it an even easier recipe, use store-bought pizza or pasta sauce.

These are great for a snack or if you are in a bind for dinner. You can always broil them too to get them a nice, golden brown color.
