Pancakes with Fruit, Berries and Chocolate


Berry and Fruit PancakesOur family loves pancakes. My husband used to dislike them though, honestly. That all changed when I added some frozen blueberries to the pancake mix. There are all kinds of different mix-ins you can add. Here are some suggestions, and feel free to adjust the amounts to how much fruit or berry flavors you prefer:

  • 1 cup frozen or fresh blueberries, blackberries, raspberries, or strawberries
  • 1 ripe banana, mashed with a fork
  • 1 cup diced peaches
  • 1 cup crushed pineapple, drained

You can even add 1/2 cup or more of chocolate chips, or other chocolate candies. *Make sure to pay attention to the thickness of the pancake batter, so it is not too watery - add more pancake mix if needed. We usually make the maximum amount of pancakes from the box, so we have enough left over to enjoy the following day. You can also have pancakes for dinner, we usually do! Easy Italian Spice Blend


Here’s a quick and easy way to whip up your own italian spice blend. There’s only a few ingredients and you can also mix and match with your own favorite spices:

Ingredients

  • 2 Parts Basil
  • 1 Part Thyme
  • 1 Part Oregano
  • 1 Part Marjoram

This is so easy to make, and is very versatile. You can use it as a rub, in a pasta sauce, in a soup or even mix with some olive oil and serve with crusty bread. You could also add sage, rosemary or tarragon to taste. Mix up a large batch so you always have some ready to go when you need it!
