Cinnamon Sugar Doughnut Muffins
You will love the combination of doughnuts and muffins in this great recipe.
Ingredients
- 1 egg
- 1/3 cup cooking oil
- 1/2 cup milk
- 1 1/2cups unbleached white flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 3 Tbsp. sugar
- 1 tsp. cinnamon
Directions
- Preheat oven to 400 degrees F.
- Grease muffin tin, set aside.
- In a large mixing bowl, beat an egg with a fork.
- Add oil and milk and continue beating with a fork; set aside.
- In another bowl, mix flour, sugar, baking powder, salt and nutmeg.
- Add to oil, egg and milk mixture and stir with a fork lightly.
- Pour into the muffin tin, evenly.
- Mix the 3 Tbsp. sugar with the cinnamon and sprinkle on the top of batter (before you bake it).
- Put a dot of butter or margarine on the top of each muffin.
- Bake for 20 minutes at 400 degrees F.
- Yield: 12 medium-sized muffins
