Guilt-Free Tomato Carbonara w/ Penne

Recently we had some leftover bacon that we needed to use. My husband had wanted to make carbonara for quite a while, so we decided to finally give it a try. If you have never eaten limp (but cooked) bacon, you are in for a treat!
Ingredients
- 1 can diced tomatoes
- 1/2 package bacon
- 1 box penne pasta
- 1/4 cup parmesan cheese
- splash red wine vinegar (or red wine)
- fresh basil (optional)
- crushed red pepper (optional)
Directions
- Cut the bacon into small pieces and cook.
- Drain off all but 2-3 Tbsp. grease.
- Stir in a box of cooked penne pasta and a can of diced tomatoes.
- Cook for about 5 minutes.
- Add red wine vinegar and parmesan cheese.
- Tip: to truly have this “guilt-free”, use Dreamfields low-carb pasta. It is just as good, if not better than regular pasta and it only has 5 digestible carbs per serving! You can find it in most grocery stores, with other dried pasta.
