Guilt-Free Tomato Carbonara w/ PenneRecently we had some leftover bacon that we needed to use. My husband had wanted to make carbonara for quite a while, so we decided to finally give it a try. If you have never eaten limp (but cooked) bacon, you are in for a treat!

Ingredients

  • 1 can diced tomatoes
  • 1/2 package bacon
  • 1 box penne pasta
  • 1/4 cup parmesan cheese
  • splash red wine vinegar (or red wine)
  • fresh basil (optional)
  • crushed red pepper (optional)

Directions

  1. Cut the bacon into small pieces and cook.
  2. Drain off all but 2-3 Tbsp. grease.
  3. Stir in a box of cooked penne pasta and a can of diced tomatoes.
  4. Cook for about 5 minutes.
  5. Add red wine vinegar and parmesan cheese.
  6. Tip: to truly have this “guilt-free”, use Dreamfields low-carb pasta. It is just as good, if not better than regular pasta and it only has 5 digestible carbs per serving! You can find it in most grocery stores, with other dried pasta.
