Quick Black Beans and Rice

This quick and easy recipe has only 6 inexpensive ingredients, and is good for you to booot!

Yields 5 1-cup servings

3/4 cup water
1 can (14.5 ounces) Mexican-style stewed tomatoes, drained
1 can (15.5 ounces) black beans, drained
1 cup uncooked instant brown rice
1 cup frozen whole kernel corn
1 medium jalapeno, seeded and finely chopped

1. In an 8 inch nonstick skillet, mix all ingredients. Heat to boiling.

2. Reduce heat; cover and simmer 12 to 14 minutes or until almost all liquid is absorbed.
