Shredded Crockpot Taquito FillingThis is a simple taquito, taco and fajita filling recipe. You could even use it to make really yummy nachos!

Ingredients

  • 1 lb. of chicken breast
  • 1 package (16 oz.) of frozen stir-fry peppers and onions
  • mexican seasonings (i.e. cumin, chili powder, garlic powder, onion powder, paprika, salt, pepper, etc.), to taste
  • fresh cilantro, optional

Directions

  1. Place thawed chicken breast in the bottom of a crockpot.
  2. Pour pepper and onions over the top of the chicken breast.
  3. Mix mexican spices together in a small bowl and sprinkle over top of chicken mixture.
  4. Sprinkle cilantro sprigs over the top of the mixture.
  5. Cook on low for up to 8 hours, or on high for 4-5 hours – until chicken is starting to fall apart.
  6. Tip: try using other cuts of chicken for added flavor (just don’t forget to debone it afterwards!).

My husband came up with this on the fly right after I got my tonsils out and I needed something easy to swallow.
